Mexican Dishes

Corn Tortilla

1 Cup Makai Aata
1 Cup Maida
1 tsp coriander
1 tsp salt
3/4 cup lukewarm water

Mix it like aata, cover it with wet napkin and let it rest

Roll it like roti with less maida
Roast it on tava like phulka and put some olive oil or fry it in oil

Roast potato
————

Cut wedges of potatoes
Crush garlic cloves and cut them with fingers
Chilli flakes
Salt and 2 table spoon olive oil

Mix all the above, spread olive oil on baking tray and bake it in preheated 180 deg celcius and after 45 min aloo will be ready

Green rice with golden ralic chips

5 Garlic cloves
1 cup basmati rice, soak it in 2 cups of water for 10 minutes
2 table spoon coriander finely chopped
1 table spoon lime juice

Cut garlic flakes, fry it in olive oil, remove it from gas and let the flakes cook in oil

Wash rice. Put rice in 2 cups of water and salt on high flame, let it boil for 10 minutes in covered pan, reduce the flame, uncover and cook it for 5 more mins
Remove it from the gas and let it stay in covered pan for 2 mins

After 2 mins, add coriander, lemon juice and oil from fried garlic pan

Tomato chutney

5 tomatoes
2 large onions roughly chopped
5/6 galrlic cloves
2 table spoon Olive oil
Salt
Chilli papers
Mix Put tomatoes, chopped oinons rough, garlic cloves, salt and Roast it on tava

Bake it in preheated 180 deg celcius oven on baking tray for 8/10 minutes, grind it and mix salt . Store it in jar for 1 month

Rajma salad
1 cup boiled rajma
1 red and 1 capsicum
2 table spoon steamed corn
2 tsp imli water
salt
1 tsp honey
parsley / coriander

Mix above ingredients

Complete Mediterrian Meal

Pita Bread

1 tsp Yeast
600 gm maida / aata
1/2 tsp Sugar – For activating yeast
Salt – For stabilizing
1 tsp olive oil

Mix 1 tsp yeast in hot water and add 1/2 tsp sugar and pinch of salt in the mixture
In 600 aata, pinch of sugar and pinch of salt and yeast mixture, 320/340 ml water,1 tsp olive oil
Cover it with wet napkin and et it rest for 30 mintures

Preheat oven at 250 deg celcius
Take it out when it starts puffing up

Tahini Sauce
————
1 cup sesame seeds
1/4 cup olive oil

Roast sesame seeds, put it in blender and add olive oil, consistency is like any wet chutney
You can store it in covered jar in refrigerator for 2/3 months

Falafel
———-
Soaked Chana
1/2 cup Coriander/parsley
1 tsp Jeera Powder
1 tsp Coriander Powder
1/2 tsp chilli powder
1 small Onion finely chopped
3-4 cloves Garlic finely chopped
Salt

2 cups overnight soaked chana, grind it coarse
Mix salt, coriander lot, jeera powder, chilli powser, coriander powder, chopped onion, galic
Make falafel and deep fry it in hot oil

Cut pita bread in two
2 Sliced oninons
In the bread, put tahini,lettuce,falafel, onion and tomato

Baba ganoush
————

1 big brinjal
1 tsp tahini sauce
1 tomato chopped
1 small onion finely chopped
3/4 cloves of garlic finely chopped
4/5 tsp hung curd
Salt
2 tsp olive oil
1 tsp parsley
1 tsp lemon juice
Spread oil on the brinjal and bake it for 10 minutes in preheated oven

Peel the brinjal, roughly chop it, mix all other ingredients

Hummus
——-
2/3 Garlic chopped
lime
2 tsp Tahini
1 cup Soaked and boiled chole
1/2 cup Olive oil
Salt

Grind all the ingredients and hummus is ready

Garnishing
——–
Olive oil
Roll some Chole in chilli powder and some in jeera powder, place them on hummus

Yam kabab

1 tsp red chilli powder
4 tsp coriander powder
1/2 tsp Garam masala
2-3 tsp cumin powder
1/2 tsp cumin seeds
1/4 tsp turmeric powder
To taste salt

25 gm roasted chana powder
2-3 tsp lime juice
1 inch ginger
3-4 nos green chilli
1 bunch fresh coriander

1 Large onion
5-6 clovers garlic
50 gm ghee
500 gm yam, boiled, chopped and mashed

Grind 2 chillis, coriander, garlic and ginger, 1 tsp jeera, 1 tsp chilli powder, 1 tsp coriander powder, 1tsp haldi, 1 tsp garam masala, 1 tsp lemon juice, 1tsp ground fried golden onion

For the batter : – Mix yam paste with above mixture, salt, roasted chana powder

Make the kababs in any shape you like and fry it on tava in desi ghee.

Molten chocolate Lava Cake

Ingredients

1/4 cup chocolate chip
1/4 cup cherry filling
1 cup Maida
1 tsp baking powder
1 tsp soda
3/4 cup amul curd
A few drops vanilla essence
1 cup amul milk
3/4 cup white better
3/4 cup castor sugar
6 table spoons cocoa powder

Preheat oven at 180 deg celcius for 10 minutes

Make the butter room temperature
Sieve and mix all Dry ingredients
Mix cherries and choco chips and keep it separate
In a separate bowl, mix butter, curd and sugar very well
In the butter mixture,mix dry ingredients and milk in small quantities so that the cake rises
Put 2/3 drops of vanilla essence

Take muffin moulds, spread the butter and dust maida
Fill 1/2 of the muffin mold with wet and dry ingredients mixture, put chocochip and cherry mixture, cover it with mixture of wet and dry ingredient.

Put it in oven , after 10/12 minutes the muffin is ready.

Starting again

I did not post anything for almost 2 years now :( That really sucks . How can anything else be more important than capturing memories ? Shame on me.

Well, at least now, after quitting job and hiring a full time 9-6 employee to help me with house work, I shouldn’t have any excuses whatsoever. So this post is to begin blogging again .

I am hoping I will be able to justify the 9-6 recruitement to myself soon, Sunil doesn’t seem to have any issues, it’s only me. As he rightly points out, sari mussibat ki jad usually ladkiyan hoti hai. In our family it is always going to be me, me being the lone representative of lady jaat in the family. You can imagine after spending close to 13 years of being employed, now staying at home and hiring someone else to work for me seems really weird. I guess if it was anything to do with software engineering I probably wouldn’t have been in such confused state, but house work.. that too full time while I am at home just managing the lady …. seems really really weird. We will see how I am able to manage MANAGE the lady. It has been only 2 days, first day was really stressful for me, second was not so stressful,hoping the degree of stressfulness reduces overtime…

Beauty

They say that ‘Beauty is in beholder’s eyes’. There has been so much research done on beauty including that babies tend to stare more at beautiful pictures than not so smart ones. Aryan being weird combination of passion(from Sunil of course) and flirt(I am sure you have guessed it right) seem to have his own concept of beauty.

One day he came home telling me “I saw a pretty girl today in my school, I was following her to make her my friend. She looked so pretty Ma (with his eye glowing :) )

LV

Aryan has been nick named as LV (short form for Las Vegas) by his teachers. Since the day we returned from Las Vegas, he has been constantly talking about it in his class room :)

Mohit, Swati and Priyal joined us in Las Vegas from Seattle. Between constant fights for a crayon, for the same piece of coloring paper, for the same toy, we all had terrific time in the Casino city of US, lost 100 bucks, got too drunk (of course, only the adults and not kids), went to 3 shows, did a helicopter ride in the Canyon, in short a very wild vacation :) . It was good to meet them after 3 years.

Room number 16

Aryan recently had his Winter Program practice in front of room number 16′s audience. Looks like there are only 9 children in that classroom. Aryan seemed very worried about such a small classroom . He asked me and Sunil to write mail to the entire WORLD’s parents asking them to put their children in class room 16 of Stratford. World, are you listening ? :)

Dragon is FIVE

Aug 12th 2007 , Aryan turned Five. He had been waiting for his birthday. Now even after 10 days, he is still celebrating it with party on 18th at Chuck e Cheese, gifts coming in mail from his beloved Ravi Uncle and Jyoti Aunty (this has never happened for me, lucky him :) ) and friends and family still calling and wishing him.

In this last year, my Dragon has started reading, riding bike without training wheels, eating proper Indian food and so much more. We moved from NJ to CA, drove 2910 miles across country. Coming to CA is like my dream come true where weather is pleasant, I enjoy my job, we have got nice neighbors and Aryan lots of friends to play with. Not to mention all of us love the townhome we are renting. The biggest thing for us we all are together again after almost 11 months and I think we all have understood importance of each other. I can’t believe it that I have started enjoying cooking too, which I used to loath. One more thing, my parents and Sunil both have started liking each other yaaaaaaaaaahooooooo. I am really thankful to the entire 2006 – 2007 for maturity it has brought me :) .

Zuly is One !!!

I am happy to announce that my dear Zuly is one year old , yahhooooooo. Aryan helped me name her when we brought her home.
